Read the canteen's current state
Inspect the selected container rather than assuming its appearance tells you the water quality. The wiki documents an Immunity cost for dirty water. Filling the container and preparing a clean drink are therefore different tasks in your supply plan.
Check the purification recipe and its result
The documented recipe combines Purification Tablets with a dirty canteen to produce a clean canteen. Use the appropriate recipe and inspect the resulting item. Do not assume that simply carrying tablets next to the water automatically changes its state.
Prepare the supply before the next long route
For example, a player finds a canteen and packs it for a distant trip. Add a quality check before leaving: confirm its current state, whether the needed purification item is available and what the recipe produced. This small preparation step distinguishes a usable supply from another problem to solve after the trip has already begun.
